Sugared whitish powder for a flan/custard with a light vanilla aroma.

Preparations
Yield: 1.5KG (full pouch) yields 15 Litres
For 40 portions: 400 g of powder to 1.8 L milk and 1.8 L heavy cream.
For 100 portions: 990 g of powder to 4.5 L milk and 4.5 L heavy cream.
- Bring milk and cream to boil.
- Remove pan from heat source and blend required amount of powder into liquid while stirring constantly with a whisk.
- Reduce heat and simmer for 2 - 3 minutes while stirring.
- Pour into bowls and chill in refrigerator (5°C) for at least 3 hours.
- Garnish and serve.
